Cheap and simple dish to make anytime. I like to fix a pan of southern fried potatoes on the side, too.

Breakfast Casserole
Ingredients:
1 tube croissant rolls
1 lb. sausage
6 eggs, beaten
2 cups shredded cheddar cheese
non-stick spray
salt and pepper to taste
Directions:
Preheat oven to 350 degrees. Spray 9×13 baking dish with non-stick spray. Brown sausage in skillet. Unroll croissant dough and lay flat in bottom of 9×13 dish. Add sausage, then pour eggs over sausage. Top with cheese. Bake at 350 degrees for 30 minutes.
